Stir-fried chicken
and veggies recipe
Makes 4 servings.
Prep time: 20 minutes
Cook time: 20 minutes
Ready in: 40 minutes
INGREDIENTS
3
tablespoons extra-virgin
olive oil
½ to 1 pound boneless, skinless
chicken breasts, cut into
cubes
2
cloves garlic, chopped
1
cup broccoli, chopped
1
cup sliced cabbage
½ cup sliced celery
1
cup thinly sliced carrots
1
cup sliced zucchini
1
green onion, chopped
1
teaspoon salt
DIRECTIONS
■
■
Heat oil in wok or large heavy
skillet over medium-high heat. Add
chicken and garlic and cook until
meat is no longer pink (at least
10 minutes).
■
■
Stir in broccoli, cabbage, celery,
carrots, zucchini, onion and salt
and stir-fry for 6 to 10 minutes or
until vegetables are no longer firm.
Extras:
Kick up the flavor with
minced onions, garlic, cilantro or
ginger. Finish with a dash of pepper
flakes, soy sauce, hoisin sauce, or
sweet and sour sauce. If everyone is
safe to eat nuts, try adding peanuts
or cashews for extra crunch and
healthy fats!
